Thank You, Tiffani

No, I’m not a Food Network shill, I just happen to like Dinner at Tiffani’s because she seems real and actually has a family and friends! And she’s not on a clock cooking for judges and sabotaging competitors.

Actually any mom/cook working for their family or creating a dinner party is on the clock and has judges. Once when we kids were young we rated Mom’s dishes. BIG mistake. She was devastated by Dad’s comments, probably ours as well.

All I want to do is make the best dish I can and not get stuck in a rut of meatloaf night, pizza night (of course I make my pizza from scratch with Italian OO flour).

The sun came up before six this morning and I had to get up, put down the shades and take out the dog. Instead of looking at the debacle in Baltimore I turned to Dinner at Tiffani’s. She made peas, and also a roast reminiscent of one of my mother’s.

We always had frozen peas, unadorned. Tiffani’s peas with parmesan looked delicious. As a kid we had a “pea count.” Everyone guessed the number of peas on the pea-hater’s plate and then the pea-hater counted every one while eating all of them. The winner didn’t have to do dishes. Everyone got dessert and the pea-hater ate the peas.

My sister had surgery once and was advised to reduce the swelling by placing a bag of frozen peas on her face. She cannot eat frozen peas to this day.

For the roast, I don’t always do tri-tip, I must admit I do look for what’s on sale at a very pricey market. I use a packet of beefy onion soup mix and a can of crushed tomatoes, cover and cook for several hours, until the beef falls apart with a fork. Oh, how my husband loves that roast again in a sandwich the next day! It’s such a cheat but if he loves my pot roast, and ten-minute lasagne (on the site) so much the better.

The carrots were interesting with honey, soy and sesame. I’ve multi-colored heirloom carrots in the frig and my husband likes them raw. I scrub them and roast them whole in a bit of olive oil, salt and pepper, and thyme for about 45 minutes, turning every 15 minutes, until tender. They’re delicious. Yellow, orange, red, purple, they’re excitement on a platter. Every taste is there.

I always like to thank people for inspiration to try new things. My problem is that my husband is deathly allergic to anything that swims, and that may even include amphibians. More culinarily challenging things were done in the past like a side of salmon with scallop mousse and “scales” of half-zucchini rounds. Of course with fried parsley garnish. That was in French cooking school days.

Now I’d like to try a leg of lamb, after many years, and I would bone and butterfly and marinate and grill it a la Jacques Pepin. I’d love to try that for my husband’s family but as cattle ranchers they eschew lamb. Sorry Chef Pepin, I now have my own marinade and cooking system. I think you tried to make it foolproof for mothers. We only have a dog and I don’t cook for her, only for us.

Also I’d like to envision a new/old cassoulet for my father. I’ve seven recipes to sift through, all from the masters, and know when I made it for him years ago he said it was the best food he’d ever eaten. Chef Pepin, do you have another recipe?

Order of Protection

I have one, to protect those I love from people who may hurt them. It is not a legal writ, it is a promise. I made that promise to my husband when I married him 12 years ago, and to our dog, that I made 11 years ago when we adopted her from the shelter.

My husband knows what he’s doing in business and, today, it is booming. Sadly some of the countries he needs to work in do not accomodate us, especially our elderly dog. Even though she’s been vetted through the British process solidly for the past ten years, there is a mandatory 30 day quarantine without her normal food and without any parental (if you can call us that) access to let her know everything’s OK and we’re here for her. She is a herder. I will not put her through that process at Nanny’s age, in dog years, sorry, Nanny.

I will go through TSA, they hate me, but if my husband’s deployment is a year I plan to visit and not have our old dog go through torture to get there. I’ll find a friend to take her while I’m away. I will not put her through that for a job. We are a family. It would be nice to keep us that way.

Opportunities abound these days, just look around the corner or in the next airplane seat. A lifetime of effort may pay off one day. Wishes, Dee

They Call Him Flipper,

Flipper, faster than lightning….

That was the intro for the dolphin and family show I watched years ago. My husband just got me a flipper. No, not a marine mammal, just a fish turner.

I just got it a couple of weeks ago and it’s useful for so many things. The remarkable things are that I’ve never had one and have been looking for the right one for years. Second is that he found me a left-handed one. I’m a leftie and that’s how I use my knives but I can only use scissors with my right and was advised by the pro to only golf as a right-hander because the strength is on your left. Not that I golf.

Tennis is left. I could swing a bat either way but must throw a ball with my left and catch with the right. I believe parents and teachers still wonder what to do or berate those who are left-handed. My father would tell those people not to do so. He was made to change by his teachers. He has four children. Two of us are left-handed. Neither my parents nor the Church or school said anything about it, which means they intervened, thanks for that.

Yes, I now have a terrific “leftie” flipper, faster than lightning…. It works for me. I believe in growing and teaching children well and they will find their own way. I’m a leftie and words like deft (rightie) and sinistre (left) mean nothing. When I see a movie or a President signing a bill I notice left-handedness, whether traditional or hook like me.

I could never do calligraphy unless I learned Hebrew. Else I would smudge all the ink. If I were adept at it and I am not, there is no way I could make a living waiting for every letter to dry writing in English.

The flipper is something I’ve wanted for many years. Leave it to my dear rightie husband to find me the right one. I use it every day. Grilled cheese sandwich, done. Thank you, dear, for always thinking of me and your stomach. Cheers! Dee

Integrity

It’s a tough thing to come by. Luckily I met a man who had a bunch of it. So did I and it burned me out trying to help people from themselves.

That’s work and I’m married to that man. I’ve been many things, including a consultant for many years. Trying to do the right thing for a client is very difficult. They hire you to do the right thing then fight every step of the way to keep any change from happening.

Even in a small organization, it is tough when the board wants you and the staff does not. I’ve had my car keyed, lies spread about me and books cooked to assure I couldn’t revitalize a key program and make many times profit for the organization, not a penny for me in an effort, funds realized prior to the efforts, plus more bang for the buck for public and community relations and jump-starting a new education program that has thrived ever since.

When the new director came on board he took great pleasure in letting me go his first day. The next morning he called and demanded a meeting. I went. He asked for my keys then said he wanted everything in my brain and in my files (of course he had copies of everything I and the past development director had done) over the past three years. He really wanted a confidential study whose public results he had but the private data was, at the Board’s request, not accessible to them or anyone because the study was about them and their role in the future of the institution.

I told the new director he had all my documents and spreadsheets and should have asked me for all the development information in my brain before he fired me. Of course the confidential study is still locked in my files and I said I would have to be present at a Board meeting where they voted to give it to him. The first thing I did was call the Chairman and met with him briefly that morning and told him what had happened. He laughed.

At the next Board meeting, the new director was fired. I was brought on as a committee member and my audience development ideas approved by committee could be brought to similar management because these votes came from the Committee and Board. I was made a Trustee for a few years. It started out as a quarter million institution and is now much more flush and professional than that partially because I and others got hands dirty and did what needed to be done. Yes, I created FlexTix. Kids for Kids was my standout work. Revolutionary back in the day.

I’ve been a consultant and board member for a number of years. In my younger years, 20 of them, I also did hands-on work in no-kill animal shelters and spaying and neutering feral cats so I know of love and loss and caring for others and doing your best for them when they might not care a whit about your efforts.

In business, one learns to cajole, educate, inspire, always learn from everyone, progress, coalesce and make goals reality.  Then go out by a lake with the teams and make some burgers and have a beer. Perhaps there’s a guitar and we sing.

No-one knows anyone any more. Nanny told me years ago to make sure my husband took a long-term job at a company and got a gold watch at retirement. I told her back then I’d try (that was before she okay’d me as the wife and her as the only Nanny I’d ever known) but the world is not like that anymore.

There is no loyalty. Or trust. One could be let go tomorrow and have nothing. Sadly for people with our talents it is a buyers market, but lest you think businesses need no technology or process or other improvements it is at your peril. When it becomes our market you’ll pay top dollar or go out of business. It’s that simple. You’ll file Chapter 11 and we’ll be on the upside.

Our tax money bailed out banks and insurance and car companies and so many others that are still secret. That’s why you’re in trouble now, because you never fixed anything, just sent traders out with bonuses to buy new Ferrari’s. And how does that play on Main Street where the fire department does the fireworks and everyone goes out to sit by the lake? It’s no Wall Street outside of NYC.

My husband always looks for meaningful work where he can make a difference in the world. That has always been his, our dream. He can fix anything, from a bank trading system to a grain bin micro-switch. Physics and agile development. He taught himself the latter and has credentials, whatever that means.

As for Nanny, my husband/your grandson could buy himself a gold watch. He does not wear jewelry except his wedding ring as he has an iPhone. Yes, it tells time. I love you for everything you are to our family and all you want for your children, grands, greats. Integrity. We love you for instilling that in everyone. Cheers! Dee

Family

My dad called yesterday. I was teaching my Swedish neighbor how to cook Texas chili. He taught me to make Swedish meatballs and wants a Kitchenaid mixer so I had him use the one I’ve had for eons and assemble the meat grinder on it and grind nearly 5# of chuck and short rib I butchered for him.

I couldn’t take Dad’s call because I was hands-deep getting ground beef into the saute pan with my husband and two guests. Dad called again and I told him what’s going on here (not pretty).

He said he called because he was worried about our old dog because of the new Asian/Midwest dog flu that kills dogs. In 11 years he’s never met our girl Zoe but cared enough to call, I love him for that. And I’m his daughter, not a dog owner on the street to whom he is telling this story.

I checked it out and AVMA and the state and numerous news reports including Reuters say a dog came from China to Chicago and reports vary but from 1,200 – 5,000 dogs are sick. Six have died but others become carriers and never show symptoms of the disease or look sick. I just read it’s killed another six dogs in Ann Arbor MI. It seems concentrated now on IL, WI, IN and MI.

So, don’t let your dog near another dog on the street, in the elevator, lobby, especially dog parks, vet offices, doggie day care. A lot of organizations in the Midwest have shut down for this disease. From what I’ve read antibiotics might help but some vets want vaccinations against pneumonia. Does that latter vaccine exist? If so these researchers could help so many humans in addition to dogs. Pneumonia seems to be the last disease human patients die from because their immune system is compromised.

From what I’ve read nose to nose dog contact is the best way for direct transfer. It can stay on your clothes 24 hours and if you pet another dog you must wash your hands (face if she kissed you) and some germs last 48 hours, this is a nasty bug.

OK, Dad, you made me do the research. You’ve never met our Zoe and I dread the day she leaves us, but you love me and my husband so you care about our dog you’ve never met. You thought about me for this issue, for what I’ve put into it over decades, and let me know your concern. I thank you and love you for everything, especially the Buick. Dee

 

 

To Better Times

My husband’s flight is scheduled to come in 1/2 hour early tonight. That’s for now. He should be home by 10:00, 10:30.

Everything is a scramble here as they’ve been resurfacing/eliminating damaging calcium deposit leaks that ruin the paint of our cars. It ruined mine and they wish to fix it. First there was valet service. Now we’re out in the open and have a shuttle bus. Most of the valets treated me well, as did the shuttle driver after I finally found out where to park my car. Our vehicles are viewable with binoculars. If there is actually security there our greatest danger may be bird poop from the seagulls, ducks and geese.

So, my husband has found a way to actually be home for an entire two-day weekend, beginning next week. I may be able to cook dinner three nights and his favorite breakfasts for two days (cereal Monday morning) and I’ll try to get everything done here so he can relax and perhaps walk the dog once or twice.

For someone who dislikes enforced change I espouse it at work and throughout life. Dog Zoe has taught me much (I trained her) over the past 11 years. I am a creature of habit. If I desire to change my job or city I’ll do it. Tell me to do it, as my family did many times, and I’ll dig in my heels, especially if there is no rational reason to do so.

I do what my dog tells me. She’s old so when she wants to go out I take her right away, even at 2:00 a.m. When she wants something, that’s different. I can usually discern between the two. Sometimes she only wants to get up on the couch or have her precious toy.

A dinner for four and cooking lesson is on deck for tomorrow. Perhaps six, no way to know. I’ll be prepared. I’m teaching Texas Chili a la Lady Bird Johnson 1962 at hers and LBJ’s Pedernales Ranch for 5,000 guests including President Kennedy.

I’m changing up the recipe once again roasting a poblano and a couple of finger chilis (don’t know what the Scoville scale will say on the latter). Now I have to finish cleaning up the house, the dog and finally, me. Have a great weekend! Dee

Wonder of Wonders

Miracle of miracles….. Talking with MIL M the other day I heard wind in the background but she’s already planted in Texas, it was warm and she was picking asparagus for dinner that comes up every year. We’re not so lucky, yet.

Today I didn’t take my car out. I walked to the store, dressed too warmly (I checked the weather a few moments before when I took Zoe out and changed jackets, an unwise move).

Just in case my husband does arrive hungry tomorrow night for the weekend I plan to make pizza dough and was getting the fixings while talking to this guy at the deli counter about different doughs we’ve made over the years. Interesting stuff, I know. Then I hear a woman’s voice asking how Zoe is doing. I looked over and it was our former USPS mail carrier, L. She said one of the gals said that Zoe says hello. She’s still around the neighborhood but not at our place. Because of L, Zoe goes up to everyone in blue pants with a dark stripe! Anyone who says dogs are color blind needs to have their eyes examined.

Funny and sad. My old dog Chani was abused by a deputy sheriff and left at a shelter to rot for a year. I spent time every week with her and when her health declined and she was becoming a danger to herself and others I took her home, rehabilitated her and we spent ten years together. She was afraid of any kind of uniform or hat for a while but got over it and her fear of the kids who used to throw sticks and rocks at her as a pup such that all the kids in the tot lot called out her name when we entered our park. And their moms let them pet her. Now Zoe seeks out people in uniform, something we should all do to thank our service personnel here and abroad.

I think my dinner party has blown up. No worries, it was supposed to be a cooking lesson and dinner. I’ll find out what’s happening tomorrow and will go ahead with the dinner anyway. I can always freeze cooked foods and give some away.

Did I write about diet trifle? I never said that, I’ll be taken out back by British chefs and flogged. Shhhh, not a word. I’m trying an experiment. Some folks around here are refusing dessert. I have an experiment. I usually make a multi-berry trifle with lemon curd with pound cake and whipped cream. Tomorrow I’m going to try angel food cake with nonfat vanilla Greek yogurt and berries. I’m not letting go of the lemon curd, though. Perhaps I can add lemon zest and juice as well. It’s a somewhat healthy alternative. I’ll let you know how it goes. Oh, I didn’t make the cake or the curd or the yogurt. I didn’t grow the berries because it’s still too cold here.

On my walk to the grocery store I saw a few tulips, hyacinths, and hints of buds on hedges. Also squirrels and another animal I saw for a fraction of a second and can’t identify. There were loads of birds and I was able to pick out a few male robins. No cardinals since a couple of months ago. The trees are still bare and I have to look at the lake and the flag, at half mast once again, to find out where the wind is coming from (that determines clothing and where to walk the dog).

My husband says fall is his favorite season. I think spring is mine, when everything comes to life and one can stop making winter stews and make ratatouille or chilled cucumber/yogurt soup. And eat a peach or a cantaloupe or a pint of cherries that taste as they should. Farmers’ markets will open. We’ll see watercraft on the lake. I can clean all the winter gear and wear a light jacket in the evening, or a pashmina shawl. I do love the colors of fall, though, especially in the Adirondacks.

It’s chicken wings tonight with a homemade Asian marinade/glaze. I’ve heirloom carrots in all colors and will roast them and make some sort of potato. Now I have to make lists. I don’t want my husband and me to spend the one day he has at home doing errands. Cheers and have a great weekend! Dee

Rights and Wrongs

A lot happened today, Tax Day. I re-did all our taxes and finished them and paid a software publisher $250 to file them. They will not do so, and an extension was the only way to go. We don’t owe a dime. They owe us, which is great news.

The week before Thanksgiving 2014 I drove my husband’s car halfway across the country because he’d been getting rental cars for months. He drove it the rest of the way and used it to get to work and back from any number of hotels. If anyone needs to stay in a hotel in Silicon Valley for several months my husband can tell you the best way to do it.

So, we put in for mileage for the nearly six weeks my husband had his car in CA last year. Now the government thinks we own or are leasing/selling or have a fleet of cars. My husband drove one car to CA, charged for mileage, and sent it home to another state.

IRS and CA keep asking me to delete the zero on the sale amount and leave it blank. I did so a number of times. Then after I paid the $250 in filing fees after fighting this forever, the software provider said I had to fix the error of my “fleet” or copy and send everything in by mail without any support after I paid $60 for “audit protection.” So I got an extension. We don’t owe anything to anyone but I would like us to see us the money they owe us someday, so have to get around the purported sale of my husband’s car when it is sitting in our underground garage, for now, until they park it and mine in the open in an unsafe neighborhood for the next ten days. Then it just might be stolen. Another debacle. Police, insurance, taxes. Tomorrow is another day, said Scarlett O’Hara.

They’ve been re-doing our underground garage for two weeks and it’s been a constant travail. Not for me, because I feed the temporary valets and placed a cute talking pig on my key chain so they know me. We pay a fortune to park here and we’re now supposed to take a bus to get to an open lot and back. May I remind you that our family “fleet” consists of two old cars that get us from point A to point B and hopefully back to A, home. They are fully owned by us and used personally except for a brief business use for one when my husband was far away for work for several months.

A good thing, indeed more than one is that I can look up the conflicting tax forms tomorrow morning, my husband is actually scheduling to be home two days each weekend instead of one, and I’ve a potential dog sitter to interview if we take a weekend off or go home-hunting. One must take the good with the bad. Cheers! Dee

 

How We Remember

I remember things by aromas such as bacon cooking, Mom’s Viennese Chocolate Pecan Torte we got for birthdays (still don’t have the recipe), cookies and stews.

Tastes, like your first cassoulet. Or beef carbonnade. I can’t even tell you except to say that whatever I tasted raised my expectations and made me want to cook. No, not in my Easy Bake oven. That was used twice and placed in the trash.

Hearing a steak cook is a memory in itself. I know how to prepare it and my husband mainly knows how to cook it, overcooked is bad.

Seeing a completed dish on a plate or plated family-style is always a treat. So is MYOP night where I teach kids to make and dress their own pizza’s starting with dough I made in advance and they make more to take home. I do remember cooking a leg of lamb, roasted potatoes and green beans for my mother’s family many years ago. I dressed the beans too early and they turned grey but that’s just a lesson in my lexicon.

I was asked at school what was the best chef’s tool and said knives but was told hands. I beg to differ. I cook with my heart. Every day. Dee

Neil Young

I’m listening to him now. It’s just a dream is the tune and I must get back to it before This Old Guitar with Joni Mitchell.

When your spouse wants a gift you should know it. I would have had tickets to a concert last week if one beloved artist was in town at the same time as my husband was in town. He should know I am this old guitar. Neil Young played it with Joni Mitchell on Hank Williams’ old guitar. Oh, my. I may swoon with such talent.

What a history old rock has with country and folk. I learned to play guitar with mainly Johnny Cash, PPM and CSNY. Lyrics only except at lessons for a few months. I’ve always wanted to make things more difficult for myself by choosing my own chords and only having the lyrics but have made it easier via the country model of A,C, G and E. Of course I know B7 and some minor chords but the F’s and others are troublesome because I’ve small, stubby fingers and can’t reach across and hold all the strings down.

I do have a lot of sheet music, some from my Dad. Notebooks of lyrics and everything is now taped up in boxes, in storage. My keyboard is in storage. I do keep my new, smaller artisan folk guitar here to hydrate it every week.

The goal with my music is to be able to share at home with family. I never made a career of it. No, I don’t want to shred on a Strat except on Rock Band. Writing and music help make the long stretches of time my husband is away on business livable. Singing Leaving on a Jet Plane and doing my own harmony is how I get through long car trips to get to see family.

His gifts to me are my guitar and keyboard. I guess you could say that over eleven years ago he got me a dog but I worked that off in the first year with research and her surgeries. Oh, last week he got me a fish turner (I call it a Flipper and try to sing the song from the old tv show but don’t recall lyrics).

The fish flipper is an incredibly useful tool but I’ve never had one and it can be used for steaks or burgers….. He found me the only one on Amazon that’s left-handed! A friend’s spouse asked for a gift. I gave ideas. My husband and I do not give gifts on regular holidays, birthdays or anniversaries. We think of little things like learning to make real Texas Chili as a gift. It just doesn’t have a box or a ribbon.

Neil Young, thanks for being a rebel. As one of your CSNY cohorts would say, “Be Yourself.” And you always have been. Thank you for that. Hearing your voice today was a gift to me. Dee
