How To Cook Capon

A few people checked this blog for that information. I would follow roasting guidelines for a chicken, albeit a larger one. Of course, cook it longer if it has stuffing in it. My surefire test is to take it out of the oven, poke it with a knife between the thigh and breast, and see that the juices run clear. That’s after basting it every 20 minutes with butter or whatever pan drippings you have so you can gauge done-ness. You don’t want to cook it three hours and have a dried bird.

I still can’t find one and am miffed at Whole Foods for not lifting a finger to help out (see previous post “Capon”). It’s tough enough that my mother, who always had Thanksgiving, died last year. For the past few years we’ve gone to my husband’s grandmother’s home for Thanksgiving with 50 other family members and we can’t go there this year and take Thanksgiving Friday off. So we’re stuck here, I don’t mind cooking Thanksgiving dinner for two but it’s also sad that grocers in one of the most high-end markets in the nation won’t help me find the ingredients I need to make a special Thanksgiving.

If a capon is to be found, you’ve found one! I still have some browsing to do before I throw in the towel and find something else to cook. It doesn’t help that my husband would prefer a steak. We’re in a new environment, alone for Thanksgiving. Why not go out for dinner and see a movie? In my dreams. Dee

  3. Hmmm, I clicked on the link & found “Brookshires” listed as a grocery store that carries capons! I doubt that’s very likely here in Red Oak, but I can check…

    if she brings her laptop to Nanny’s for Thanksgiving we can have a video conference and all we’ll miss is hugs and turkey! Dee

  5. I thought for sure Whole Foods would have a capon, I was heading there this weekend to pick one up. I am so disappointed as I am only cooking for two also and really don’t want a big turkey, thinking a capon would be perfect, so glad I read your post. If you live in NYC and find a place to purchase one, leave a post.

    • Hi Margaret, I’m sure you’ll have a much better chance of finding one in NYC than I will in Utah! Good luck. Zabars, any of the high end groceries. My brother lives on the upper West side and couldn’t find mincemeat to bring to Christmas at my Dad’s last year so I had to order it online and have it shipped. In all of NYC, there was no Crosse & Blackwell’s or Nonesuch to be had, and he was told to go to New Jersey. I talked to the lamb guy at the Farmers’ Market this past weekend and he gave me a potential source so I’ll check it out. Dee

  6. Hello, I live in Maryland and found a frozen Capon at Giant Foods. That is where I purchase one after calling Whole Foods, thinking they would have them but did not. Also there is a website : Dartagnan.com where you can purchase a fresh capon. I am cooking one for Thanksgiving and wish you luck in finding yours. Happy Holiday

    • Congratulations! I’ve no luck and am thinking of marinating Cornish game hens and perhaps even grilling because it threatens to be warm (low 50’s) and sunny. My husband still wants steak! Happy Thanksgiving, Dee

  8. I have looked, just yesterday, and D’Argagnan does not have capon this year, or at least now. But they may be raised for holiday time which means they may not be ready yet. I’ll check. Dee

  9. This year I sent a request to Whole Foods HQ asking why they will not sell capon. It’s been a couple of weeks and I’ve heard nothing. My local butchers are normally very good, know I’m a local and treat me well. It is not their fault that HQ will not sell capon. I know they won’t get into specifics of letting these potential roosters grow three extra weeks, if you get my meaning. I just want them to tell me that.

  10. I FOUND ONE! Local and fresh. I’m thinking of doing a Spanish-themed dinner for friends. Never cooked Spanish food before but do have pimenton and onion and garlic and potatoes and eggs. The guy at the butcher shop will even talk to me about capon for the blog! I’ll stop by tomorrow or Saturday. I’m so excited! I’ve been looking for years and hope it tastes as good as I remember when mom used to make it. Dee
