“Cold Dinner”

I’m thinking of making a cold dinner this evening. The weather is finally warming up and it’ll be in the 70’s this afternoon. On hot summer days when I was growing up Mom used to make a cold dinner. Dad was never a fan of it. It usually consisted of baked, cooled ham, hard-cooked eggs, tuna salad, sliced tomatoes, a hunk of sharp cheddar and a good loaf of bread.

But cold dinner could be anything, such as nicoise salad. Ironically, it takes more time and effort to make than my usual hot meal, but Jim likes it, without fish.

So I think I’ll make some eggs, and pick up a rotisserie chicken for a salad with celery, apple, walnuts and tarragon. I’ll pick up a loaf of artisan bread and some Black Diamond cheddar. I have romaine for a salad and may pick up some radishes for a summery crunch.

I can’t start working on it now because the water is off and the guys are down a manhole out front that does not allow me to back the car out to get to the store. Since Jim can’t eat fish, perhaps I’ll pick up a nice can of Italian tuna in olive oil and make myself a sandwich for lunch. Happy cooking! Dee

  1. It was great! Jim liked it. I added a couple of cluster tomatoes in wedges dressed with balsamic vinegar, olive oil, salt and pepper; and some green grapes. Also a few chocolate chip cookies for dessert. He’s doing “homework” for his final day of a seminar tomorrow – Friday. TGIF! Dee

  2. I can’t really say too much about it. My usual sad needy look didn’t work well enough. I need to have some visitors. They are usually weaker links.

    I did manage to get Jim to give me a tiny piece of radish. Radish is yucky! Meat is way better.
