I told you about my limited cooking facilities here at the extended stay for a week. I told you also that I wouldn’t spend my time figuring out stuff to cook given these limited facilities. But that doesn’t stop my evil little brain.
One of Jim’s favorite dishes is spaghetti and meatballs. I believe I have the wherewithal to boil pasta, make or heat a sauce, and make or microwave frozen meatballs. He’ll love it!
Today I cleaned out the coolers, and re-froze the freezer packs. Also unloaded the small Zoe box and filled three Kongs with peanut butter and froze them. She’s already had one.
It was sunny most of the day today. No rain as predicted. If you’re from snow country you know what “black snow” looks like when it piles up in parking lots, plowed to one desolate spot. Yesterday’s snow blanketed the “black snow” mounds making them look at least passable again.
Hope you’re cooking up a sumptuous meal tonight. Time for me to feed the pup and take her out. She’s watching Sandra Lee on Food Network. I question her taste in cable shows. Cheers, Dee

Congrats on your safe arrival. I had the occasion to live in an extended-stay hotel for a month while a house we were building was being finished. It was like a vacation (free breakfast), except….I got chicken pox while we were there! As an adult, in my 30s. It was awful, and of course, I had to quarantine myself in the room for at least 2 weeks (both to avoid infecting anyone else and because I looked horrible)! Good times…

I know you will be relieved to settle in [even temporarily] to a place w/a real kitchen…
I did it! Frozen meatballs, jarred sauce and pasta. Romano cheese and a new grater, my favorite silicone spatula was falling out of its box so I brought it into the fold.
We had spaghetti and meatballs with two burners and a microwave. Strange thing is that I met someone with grocery bags that was doing the same thing.
Tomorrow it’s spaghetti al’la carbonara. The charcoal-smoker’s pasta with bacon and cheese and eggs.
One can make that in an extended-stay. More homes to visit as I continue my search. One we really like is non-responsive so we have to keep looking.
That’s not easy in snow storms.
I recently came accross your blog and have been reading along. I thought I would leave my first comment. I don’t know what to say except that I have enjoyed reading. Nice blog. I will keep visiting this blog very often.
