I try to always go with what is fresh at the market, but so much is not local anymore. I don’t think Utah has grown any pineapples ever but I have one ready to go.
What happens first is the urge to either have a cold dinner with hard-cooked eggs, good bread, sharp cheddar, grapes, plums, my marinated olives and whatever’s fresh. The other inclination is to make a hearty stew. It all depends on temperature, and it spikes high and low here daily.
It’s about missing the season that’s about to end while looking forward to the new asparagus and peas and life. Sliced tomatoes with salt, pepper, a bit of olive oil and fresh basil. I can see it but today would rather have coq au vin or beef carbonnade. Here’s to life in the slow lane! Dee
