Yesterday I made fajitas. Not any old recipe, mine. It’s all due to the spices and cooking method. I’m eating it cold for a late breakfast alone as husband and dog are still sleeping. They both slept through a Cat 5 hurricane so they cannot possibly hear me type.
Dee’s Fajitas: Deeply sweat, cook and caramelize a sweet onion, sliced and several cloves of garlic. Slice boneless chicken breast very thin and marinate with the juice of two limes, salt and pepper, and about 1sp t each ancho, chipotle and Aleppo chile powders, along with a tsp of cumin. Let the meat marinate while you sautee the vegetables.
Take out the veg, Wipe out the pan. Turn it near high and add your flour tortillas, dry, for a moment each, turning mid-way. Place on a plate. When finished, turn a same-sized plate on top allowing them to stay warm while you place a bit of oil in the same pan and drop in the marinated chicken without juices.
Cook until the chicken is nearly done. Add the veggies back to re-heat. Plan an assembly line with lime wedges, sour cream, homemade guacamole, grated sharp cheddar cheese, homemade salsa ,wrappers and chicken. Have your guests serve themselves. Yes, dog Zoe has killed a couple mice. Happy day! Dee
My pans hanging have been clanging together recently. Thus the thought of mice and not “nice.” Believe me, if there were mice around our dog Zoe would take care of them instantly. Then I’d have to take one out of her mouth and trash it before eating (her, not me) then vomiting on our bed exactly 48 hours later. That’s at least five loads of wash right there so I try to avoid it. I meant to say “mice.” Not “nice.”
