The Bat Cave

Well, not necessarily. How about the Bat Tour?

We’re looking to charter the local boat for a bat tour. No, Mr. and Mrs. Howell, it won’t be the dreaded “three hour cruise” that allowed the Professor to thwart your return to civilization for years.

Apparently there are several hundred thousand bats (probably Mexican freetail) that emerge from under a local bridge every evening to go to the coast and feed on mosquitos and other insects en route.

I’m hoping to book the tour and make hors d’oeuvres for the guests. No deep-fried bat wings, please. But if you have suggestions please make a comment here. I’m looking to keep it simple and cold or room temperature. I’m thinking smoked salmon mousse on pumpernickel rounds atop a slice of cool cucumber. Sweet potato chips with cumin and cayenne. Perhaps mini-chicken salad sandwiches with celery, scallion, apple and nuts. And hummus with pita toasts for the vegetarians.

Aside from seeing friends and neighbors, the best thing is that I don’t have to get the Bat Car out of the Cave. They’ll dock next door.

If you’ve any suggestions please add as comments! All input is welcome, fellow cooks! D
